Cottage Cheese Hummus

Unlike traditional hummus, this Cottage Cheese Hummus is low in fat. Cottage cheese stands in for the extra olive oil and gives the hummus a creamy texture and a dose of calcium and protein. My favorite way to eat this is spread over a toasted pita then topped with crumbled feta cheese, toasted walnuts, cilantro and black pepper. Or sometimes just with bagel chips.

Since posting, I've increased the amount of spices in this recipe. The old version called for just 1 clove of garlic and 1 tablespoon of lemon juice, but in my old age I need more flavor and use up to 3 cloves. The amount of lemon juice can also be changed. I sometimes add a teaspoon of honey as well just to make everything else pop. It doesn't make it sweet.

Cottage Cheese in a Vitamix 5200

After a decade or so of wishing for one, I finally purchased a Vitamix and am pureeing everything in sight. I like it so far. It doesn't work as fast I thought it would on cottage cheese. In fact, it sounds like it's breaking when pureeing cottage cheese, but using the tamper helps a lot. It might be a matter of needing a smaller container. The one that comes with the 5200 is very large. Anyhow, even with the large container I was able to get this hummus into an almost but not quite whipped state.

Cottage Cheese Hummus

Ingredients
 

  • 15 oz can garbanzo beans, drained
  • 3 cloves garlic
  • 2 tablespoons tahini
  • ½ cup cottage cheese low fat
  • 2-4 tablespoon lemon juice plus more to taste
  • ½ teaspoon cumin
  • ¼ teaspoon salt plus more or less to taste
  • Aleppo pepper or smoked paprika for garnish

Instructions
 

  • Place drained beans and all remaining ingredients except for the Aleppo or paprika in food processor and process, scraping sides of bowl, until creamy and smooth.
