Chocolate Chip Oreo Brownie Bars

Chocolate Chip Oreo Brownie Bars, which go by an old name that should be retired, are layered bar cookies that have a base of chocolate chip cookie topped with Oreos and brownie. I've made so many versions since posting this in 2012, but this was my first 8-inch pan version. All I had were the 100th Anniversary cake batter flavored, which is why my bars have little dots of confetti in them. If you can find them, great. If not, go with Double Stuff.

Chocolate Chip Oreo Brownie Bars

Here's the recipe if you want to take it and make it your own. The nice thing about this one is you can do it all in one bowl. You make the cookie dough first, press it in the pan with the Oreos, then mix the brownie batter right in the same bowl as you mixed the dough.

I've added grams to the recipe, so hopefully that will be helpful for some people. I also changed the Oreo Brownie Bars serving size to a more realistic 9.

Chocolate Chip Oreo Brownie Bars

Bar cookies made with chocolate chip cookie dough, Oreos, and brownie batter. This recipe makes an 8 inch square pan, so double it if you want to make a 9x13 inch pan.

Ingredients
 

Cookie Base

  • 1 stick unsalted butter, softened (114 grams)
  • 6 tablespoons granulated sugar (75 grams)
  • 6 tablespoons packed light brown sugar (75 grams)
  • ¾ teaspoon vanilla extract
  • 1 large egg
  • 1 cup plus 2 tablespoons (140 grams)
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ⅔ cup chocolate chips
  • 9 whole Double Stuff Oreos

Brownie Layer

  • 6 tablespoons unsweetened natural cocoa powder
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • ¾ cup all-purpose flour (100 grams)

Instructions
 

  • Preheat oven to 350 degrees F. Line an 8 inch square metal baking pan with foil and spray the foil with cooking spray.
  • Cream the butter with the brown and granulated sugar. Beat in the vanilla and egg and beat just until the egg is mixed, then beat in the salt and baking soda. By hand, stir in the flour until it is incorporated. Stir in the chocolate chips. Press dough into the bottom of the pan as evenly as possible.
  • Press 9 whole Oreos directly into the dough.
  • Wash out the mixing bowl. Add the cocoa powder and oil and whisk until smooth. Whisk in the eggs, sugar, vanilla and salt until smooth; stir in the flour. Spread this batter over the Oreos.
  • Bake on the center rack at 350 for 38 to 40 minutes or until brownies appear set and edges are puffed up. Unfortunately, the toothpick test doesn’t really work here. Cool on a wire rack. When cool, chill the brownies for about 2 or 3 hours. Lift from pan and cut into 16 squares.

    I have GOT to start looking at the oreo section in the market. Never heard of an oreo that tasted like cake batter. Really like this recipe, Anna!

    I think I am the only person on the planet who doesn't like oreos. Still, stick em in a brownie, and I could probably manage...mostly, though, just wanted to give props for the "Put a bird on it" reference. Love that sketch!!

    I never knew that brownie-ccc bars were called 'brookies.' That's so cute--I love all of your 'factoids' about names for different kinds of baked goods.

    I think that using the cake batter Oreos ups the ante of slutty brownies into slatternly... 😉

    Let's see -- chocolate cookie, oreo, brownie all in one. What else to add to make it even more over the top? How about a scoop of ice cream and fudge sauce. Sound like something Katrina would do. 🙂

    The 100th Anniversary Oreos were only here (in Walmart) during the week or two of the anniversary and I can't find them anymore. They definitely have a different flavor--it's cake! Guess who didn't like them at my house? 😉

    Good, then the confetti tarts them up a little bit more! I'm starting to dig this cake batter flavored Oreo, but don't want to get too attached to it since it's a special edition.
