Oreos are everywhere! And have you tried the 100 Year Anniversary birthday cake flavored Oreos? I bought a bag the other day thinking they were regular Oreos with confetti sprinkles in the center. Nope. They actually taste like cake batter. Plus they added a little color to these Oreo Brownie Bars.
These Oreo Brownie Bars are similar to an old Pillsbury recipe called Brookies, a layer of brownie topped with a layer of chocolate chip cookies. But in this case, the chocolate chip dough is on on the bottom, the brownie is on the top, and there's an Oreo in the center. The person who came up with the idea to put the Oreos in the bars was Amanda, who used a 9x13 inch pan, a scratch chocolate chip dough and a topping made with packaged brownie mix. Rather than re-do her version, I decided to try it in an 8 inch square pan using an easy scratch base and scratch brownie. As for the Oreos, all I had were the 100th Anniversary cake batter flavored, which is why my bars have little dots of confetti in them. If you can find them, great. If not, go with Double Stuff.

Chocolate Chip Oreo Brownie Bars
Ingredients
Cookie Base
- 1 stick 4 ounces unsalted butter, softened
- 6 tablespoons granulated sugar
- 6 tablespoons packed light brown sugar
- ¾ teaspoon vanilla extract
- 1 large egg
- 1 cup plus 2 tablespoons 5 ounces all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ⅔ cup chocolate chips
- 9 Double Stuff Oreos
Brownie Layer
- 6 tablespoons unsweetened natural cocoa powder
- ½ cup vegetable oil
- 2 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
- ¾ cup all-purpose flour
Instructions
- Preheat oven to 350 degrees F. Line an 8 inch square metal baking pan with foil and spray the foil with cooking spray.
- Cream the butter with the brown and granulated sugar. Beat in the vanilla and egg and beat just until the egg is mixed, then beat in the salt and baking soda. By hand, stir in the flour until it is incorporated. Stir in the chocolate chips. Press dough into the bottom of the pan as evenly as possible. Press 9 whole Oreos directly into the dough.
- Wash out the mixing bowl. Add the cocoa powder and oil and whisk until smooth. Whisk in the eggs, sugar, vanilla and salt until smooth; stir in the flour. Spread this batter over the Oreos. Bake on the center rack at 350 for 38 to 40 minutes or until brownies appear set and edges are puffed up. Unfortunately, the toothpick test doesn’t really work here. Cool on a wire rack. When cool, chill the brownies for about 2 or 3 hours. Lift from pan and cut into 16 squares.

I think I am the only person on the planet who doesn't like oreos. Still, stick em in a brownie, and I could probably manage...mostly, though, just wanted to give props for the "Put a bird on it" reference. Love that sketch!!

The 100th Anniversary Oreos were only here (in Walmart) during the week or two of the anniversary and I can't find them anymore. They definitely have a different flavor--it's cake! Guess who didn't like them at my house? 😉
