Fiber One Key Lime Pie

Fiber One Key Lime Pie is much better than it sounds. Trust me! I tried it years ago and have been making it ever since. It's a slightly healthier (but still tasty) Key lime pie with a crust made of fiber cereal and a filling of Yoplait Key lime yogurt mixed with cream cheese, gelatin and other ingredients that keep the calorie count a bit lower than your usual Key lime pie. So more fiber, fewer calories, a bit of protein from the yogurt make it a slightly less indulgent dessert.

Since posting the recipe, I stopped buying Fiber One due to some ingredients I'm not fond of and switched to All Bran. So you can substitute All Bran for Fiber One, though the texture will be just slightly different.

Key Lime Pie

Mmmm. Fiber Filled Key Lime Pie

Ingredients
 

Crust

  • 2 cups Fiber One cereal (or All Brans)
  • 4 tablespoons melted butter
  • 1 tablespoon corn syrup I think maple syrup or golden syrup would work
  • 1 teaspoon vanilla

Filling and Topping

  • 2 tablespoons cold water
  • 1 tablespoon fresh lime juice
  • 1 ½ teaspoons unflavored gelatin
  • 4 oz reduced fat cream cheese softened
  • 18 oz Yoplait Fiber One Key lime pie yogurt I had to use a different brand because they were out of this one
  • ½ cup reduced fat whipped topping
  • 2 teaspoons grated lime peel

Instructions
 

  • Preheat oven to 350°F. Crush cereal in a food processor until it’s the consistency of breadcrumbs. Fiber One says you can do this step with a heavy duty plastic bag, but if you have a food processor it makes the job easier and you get a fine grind.
  • In medium bowl or in the bowl of the food processor, mix crust ingredients until blended. Press crust mixture evenly and firmly in bottom and up side of (well greased!) 9-inch glass pie plate. Bake 10 to 12 minutes or until firm. Cool completely, about 1 hour.
  • In a 1-quart saucepan, mix water and lime juice. Sprinkle gelatin on lime juice mixture; let stand 1 minute. Heat over low heat, stirring constantly, until gelatin is dissolved. Cool slightly, about 2 minutes.
  • In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Add yogurt and lime juice mixture; beat on medium speed until well blended. Fold in whipped topping and lime peel. At this point, do a taste test and see if you think it’s sweet enough. If not you may want to stir in a tablespoon of powdered sugar.
  • Spoon into crust. Refrigerate until set, about 2 hours.

    Pepper, I eat it as a stand-alone snack too.

    This really was a good pie. Fuzz doesn't really care for pie, but the last time I made a full fat key lime pie she took a bite and enjoyed it. When she saw this one, she asked for a piece. I gave her one without mentioning the ingredients and she ate it all.

    I love Key Lime Pie. I happen to like Fiber One cereal..so much so, I can eat it as a standalone snack.

    So what's not to love about this recipe!

    I look forward to trying it out as soon as my kitchen renovation is finished....sometime next year. lol : )

    This recipe sounds and looks so refreshing. I love the contrast of the crust with the tart, creamy filling. I'm definately trying this one as soon as I get a chance!
