Ways to Use Egg Whites

If you develop an ice cream making obsession, chances are you will be using a lot of egg yolks and wondering what to do with leftover egg whites. If that's the case, here are some ways to use egg whites! I hope the list comes in handy and that even if you don't have a lot of egg whites, you'll find something worth trying.

Freezing Egg Whites

Good news! Egg whites can be frozen. 1 egg white weighs about 30 grams, so you can weigh out portions of 60 grams for 2 egg whites or 120 grams for 4, and freeze them directly in zipper bags. When it's time to thaw, just submerge the frozen bag of egg whites in warm water and they thaw pretty quickly. If you'd like to separate the egg whites, you can divide among silicone muffin cups and freeze.

So freezing is the first option, but there are so many more fun things to do with them.

Granny's Ice Cream Recipe

I didn't think this recipe would make the list, but Granny's Ice Cream from Allrecipes.com, an ice cream made with sour cream and egg whites, is actually very good! I made it as written with no changes. It has a bit of a sour cream flavor, but it's pleasant. It would be an excellent base for an ice cream with chunks of red velvet cake or better yet, Red Velvet Oreos. My one complaint is that with ½ cup of sugar it is very sweet. I'll be making the next round with ⅓ cup of sugar. And there will be a next round.

Luby's Butternut Brownie Pie!

Our family loves this pie! I'm not sure why it has "Brownie" in the name, but am wondering if maybe it's a reference to the old brownies of yore that were made with all brown sugar. Did you know that? The first brownies did not actually have chocolate. Neither does this pie, but it's so good. Luby's Butternut Brownie Pie.

White Cake Without Yolks

Having a stash of frozen egg whites comes in handy when you're in the mood to make a white cake. I think my favorite recipe is the Betty Crocker Silver White Cake made with all butter. I also love this little Six Inch White Cake since we are lonely empty nesters. The Zoey Bakes White Cake is also very good and can be made in an 8-inch square pan for smaller groups.

Angel Food Cake

My grandmother's favorite and one of mine is Angel Food Cake. If you make it with 7-Minute Frosting, you'll use even more of those egg whites.

Egg White Omelettes

Muffin Pan Quiches are really good, but omelettes are almost just as good and so easy. Just rub a pan with a little butter, add eggs and cook. They're very fantastic topped with fresh Parmesan cheese or combined with any number of vegetables.

Biscotti Thins

If you haven't tried them already and want to use those whites, consider Biscotti Thins. They're tasty treats and they make a great accompaniment to all that ice cream you may be making. This recipe calls for about 120 to 140 grams of whites. Creative bakers like this recipe because they can change the nuts, dried fruit and flavorings. The Things stay fresh for weeks in a tin, so you can bake up a bunch of Biscotti Thins and ship them to a friend, give them away or eat them over time.

Chocolate Pecan Chewies

This is an old favorite that calls for egg whites, cocoa, pecans and powdered sugar. You can make them as Chocolate Pecan Chewies or use another nut such as hazelnuts. I need to make these again soon and take a new photo. I'll bet they'd also be good as cookies for ice cream sandwiches.

Meringue Cookies

Last and most definitely least, you've got Meringue Cookies as an option. I'm just kidding about "least". We love these too, and my personal favorites are the Travis House Cookies. There are a whole lot of others to choose from in the Meringue Cookies category.
