Oatmeal Raspberry Jam Bars

This is probably my favorte jam bar.  You can make it with whatever flavor jam you like, so it really comes in handy when you acquire some really good jam or preserves.

    Thanks to everyone for posting their grandmother memories. It will be two years since I lost my most beloved grandmother on July 4th. She always made pineapple upside down cake in her cast iron skillet when we came to visit. I never found her recipe for it and I assume she was one of those farm ladies who just eyeballed everything. We were at a restaurant last week and it was on their menu and I was crushed when they said they had just sold out. I’d love to try to duplicate it. I may have to go on a mad baking quest and inundate all my friends with pineapple upside down cake until I come close to hers.

    I tried the Levain cookies with the bread flour and also the oatmeal cookies you posted recently. I did use the dried cherries and I liked how they cut through the sweetness of the cookie. I’m going to try these next week since we’re having my son’s birthday party and one of his friends is allergic to eggs.

    If you have any other recipes that use bread flour, please pass them on. I had to buy a huge bag and I don’t think the Levain cookies are a once a week baking thing for me given that they’re probably 1000 calories each. :-)

    I am not sure that link will work but you can analyze any recipe with this (you may have to rejigger the wording for some ingredients, but to get the nutrition, it doesn’t matter that much if, for example it only recognizes brown sugar rather than dark brown)

  5. I actually made Levain again with yeast, with no leavening and with yeast but wait almost 1 hour before baking. Still prefer the first ones. I’m glad to know they have 731 calories, that means I can eat almost 3 a day! But can’t eat anything else, lol!
    Grandma memories are great, I still have my 2 but they’re old know and don’t bake anymore. One of them made the best sponge cake by weighing the whole eggs (shell and everything) to figure out the quantity of sugar and flour. I allways thought it was the coolest thing ever. And she made also a pretty cool jelly roll, but without jelly, she used bread and coffee to fill it. I know it sounds stange but it was great.
    Bars look great, good to have friends who can can!

    I make a similar oatmeal almond bar from Everday food. Its a great use for leftover jam.

    Marcy Goldman’s Garlic Slathered Stretch Bread is a fantastic use of bread flour.

    I make these at Christmas and I dont why I dont make them through out the year, they are my daughters favorite. I have expreimented with different jams and I love peach but strawberry is the definite winner in my house!
    I also wanted to add that we can all of the time, my mom and I can tomatoes, peaches. pears and roasted peppers with garlic and olive oil…no one has been killed in our endeavours!

    Wanted to report that the part I made with the pureed fresh strawberries was better the next day. The bright fresh fruitiness of the strawberries had mellowed and suit the bar better. And while they are absolutely delicious with just the jam, I must say that the raspberry and chocolate chip portion is quite a treat.

    Also just to note, I was able to make these all-organic, which always pleases me.

    These will definitely become a regular thing. I want to try them with blueberry jam, too – or make my own blueberry-puree, even.

    Oh – my grandmothers specialty was applesauce cookies, made with her home made applesauce. Very soft and yummy. I can picture, and smell, her big pot of applesauce on the stove, and watching her pare the apples with spiraling peels.

    I made these yesterday but modified it a bit…. I made it with whole wheat four and added 3/4 cup toasted coconut to the oatmeat then sprinkled it with untoasted coconut…. I also made it with sugarfree jam. it is delicious!!!!
