I posted about this self-frosting pineapple coconut cake multiple times to the point, I suspect, that it became obnoxious. So here’s the final word.
I thought the cake was too moist, but I don’t like super moist cakes to begin with. Lots of people like the recipe. It sort of frosts itself.

Well, Todd liked it. He’s usually honest when it comes to reviews and he didn’t have a problem with the cake. I think I just prefer a different style cake.

I haven’t had a chance to bake the cashew cookies, but I will tell you how they come out, hopefully this weekend.
Are you sure that recipe for the cake is ‘good’–I clicked on the site and some of the recipes seemed pretty weird with their ratios and ingredients.
