Biscuits and Scones on Cookie Madness
The Biscuits and Scones Archive is the home of all the flaky, fluffy, high rising quick breads of various flavors, shapes and sizes. The collection includes more scones than biscuits, though a good amount of both!
One thing you should know about biscuits and scones of all types is that recipes are a guideline and your amounts of flour and liquid may vary. For that reason, always add the liquid gradually even if the recipe doesn't say so. So always add liquid gradually.
Some personal favorites from the collection include but are not limited to
- Maple Oat Scones -- These are buttery, flaky and have a good deal of maple flavor. I'd describe them as more flaky than moist. If you prefer a scone (maple) with more moisture, the Small Batch Maple Chocolate Chunk.
- The Cream Cheese Scones are really good! They are kind of like Great Harvest scones.
- For something a little savory, try the Ham & Cheddar Biscuits. As usual, my version makes a slightly smaller batch.
I need to put some more thought into what I think are the best biscuits because I have so many different recipes here and don't make them as often as I like. My favorite biscuit in the past was Alton Brown's recipe, but I may have outgrown it. I will update soon, so check back.
